Description
A hearty tomato white bean soup that is easy to make and packed with flavor.
Ingredients

- 2 cups diced tomatoes
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Stir in diced tomatoes and cook for 5 minutes.
- Add white beans, vegetable broth, basil, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup to desired consistency.
- Serve hot.
Notes
- You can add spinach or kale for extra nutrition.
- Serve with crusty bread for a complete meal.
