Ingredients

  • Spaghetti: 250 grams (about 8.8 oz)
  • Shrimp: 300 grams (peeled and deveined)
  • Fresh spinach: 150 grams (about 5 oz)
  • Cherry tomatoes: 200 grams (halved)
  • Garlic: 3 cloves (minced)
  • Olive oil: 3 tablespoons
  • Parmesan cheese: 50 grams (grated)
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Prepare all ingredients: measure spaghetti, peel and devein shrimp, wash and dry spinach, halve cherry tomatoes, and mince garlic.
  2. Cook spaghetti in a large pot of salted boiling water according to package instructions (8-10 minutes) until al dente. Reserve 1 cup of pasta water, then drain.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat, add minced garlic, and sauté for 30 seconds.
  4. Add shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  5. In the same skillet, add the remaining olive oil and halved cherry tomatoes. Cook for 3-4 minutes until softened, then add spinach and cook for 2 minutes until wilted.
  6. Return shrimp to the skillet, add drained spaghetti, and toss everything together. Gradually add reserved pasta water to reach desired consistency.
  7. Remove from heat, sprinkle with grated Parmesan cheese, and toss again. Serve warm, garnished with additional cheese if desired.
