A quick and delicious pasta dish featuring shrimp, spinach, and cherry tomatoes, perfect for busy weeknights.
Ingredients
- Spaghetti: 250 grams (about 8.8 oz)
- Shrimp: 300 grams (peeled and deveined)
- Fresh spinach: 150 grams (about 5 oz)
- Cherry tomatoes: 200 grams (halved)
- Garlic: 3 cloves (minced)
- Olive oil: 3 tablespoons
- Parmesan cheese: 50 grams (grated)
- Salt: to taste
- Pepper: to taste
Instructions
- Prepare all ingredients: measure spaghetti, peel and devein shrimp, wash and dry spinach, halve cherry tomatoes, and mince garlic.
- Cook spaghetti in a large pot of salted boiling water according to package instructions (8-10 minutes) until al dente. Reserve 1 cup of pasta water, then drain.
- In a skillet, heat 2 tablespoons of olive oil over medium heat, add minced garlic, and sauté for 30 seconds.
- Add shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
- In the same skillet, add the remaining olive oil and halved cherry tomatoes. Cook for 3-4 minutes until softened, then add spinach and cook for 2 minutes until wilted.
- Return shrimp to the skillet, add drained spaghetti, and toss everything together. Gradually add reserved pasta water to reach desired consistency.
- Remove from heat, sprinkle with grated Parmesan cheese, and toss again. Serve warm, garnished with additional cheese if desired.

- For a vegetarian option, substitute shrimp with tofu or chicken.
- Add red pepper flakes for a spicy kick.
- Experiment with different greens like kale or arugula.
- Use feta or goat cheese instead of Parmesan for a different flavor.
