A delicious tofu turkey alternative for Thanksgiving.


Ingredients

  • 2 lbs firm tofu
  • 1 cup cooked quinoa
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/4 cup soy sauce
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1/2 tsp black pepper
  • 1/4 cup vegetable broth
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Drain and press the tofu to remove excess moisture.
  3. In a large bowl, crumble the tofu into small pieces.
  4. Add cooked quinoa, onions, celery, carrots, soy sauce, nutritional yeast, garlic, thyme, sage, pepper, vegetable broth, and olive oil.
  5. Mix until well combined.
  6. Transfer the mixture to a greased baking dish.
  7. Bake for 45 minutes, stirring halfway through.
  8. Let it cool for 10 minutes before serving.

Notes

  • For added flavor, marinate the tofu overnight.
  • Serve with your favorite vegan gravy.
  • Store leftovers in the refrigerator for up to 3 days.
