Description
A delicious tofu turkey alternative for Thanksgiving.
Ingredients

- 2 lbs firm tofu
- 1 cup cooked quinoa
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/4 cup soy sauce
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried sage
- 1/2 tsp black pepper
- 1/4 cup vegetable broth
- 1/4 cup olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Drain and press the tofu to remove excess moisture.
- In a large bowl, crumble the tofu into small pieces.
- Add cooked quinoa, onions, celery, carrots, soy sauce, nutritional yeast, garlic, thyme, sage, pepper, vegetable broth, and olive oil.
- Mix until well combined.
- Transfer the mixture to a greased baking dish.
- Bake for 45 minutes, stirring halfway through.
- Let it cool for 10 minutes before serving.
Notes
- For added flavor, marinate the tofu overnight.
- Serve with your favorite vegan gravy.
- Store leftovers in the refrigerator for up to 3 days.
