A delicious and cheesy dish featuring rolled zucchini filled with three types of cheese.
Ingredients

- 2 large zucchinis
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 egg
- 1 cup marinara sauce
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta, mozzarella, parmesan, egg, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of cheese mixture on each zucchini strip and roll it up.
- Arrange rolled zucchini in the baking dish.
- Top with remaining marinara sauce and sprinkle with extra mozzarella.
- Bake for 25-30 minutes until cheese is bubbly.
Notes
- Use a mandoline for even zucchini slices.
- Feel free to add herbs like basil or oregano.
- Serve with a side salad for a complete meal.
