Ingredients

  • 1/4 cup olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp sugar
  • 1/4 cup fresh basil, chopped
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt, pepper, and sugar.
  4. Add chopped onion and garlic to the baking sheet.
  5. Roast in the oven for 30-40 minutes until tomatoes are caramelized.
  6. Remove from the oven and let cool slightly.
  7. Transfer to a blender, add basil and oregano, and blend until smooth.
  8. Adjust seasoning if needed and serve.
