A rich and flavorful roasted tomato sauce perfect for pasta and pizza.
Ingredients

- 2 lbs ripe tomatoes
- 1/4 cup olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp sugar
- 1/4 cup fresh basil, chopped
- 1 tsp dried oregano
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the tomatoes in half and place them on a baking sheet.
- Drizzle with olive oil and sprinkle with salt, pepper, and sugar.
- Add chopped onion and garlic to the baking sheet.
- Roast in the oven for 30-40 minutes until tomatoes are caramelized.
- Remove from the oven and let cool slightly.
- Transfer to a blender, add basil and oregano, and blend until smooth.
- Adjust seasoning if needed and serve.
Notes
- Store in the refrigerator for up to one week.
- Can be frozen for later use.
- Use fresh tomatoes for the best flavor.
