Description
A delicious vegetarian main dish for Thanksgiving.
Ingredients

- 2 cups of quinoa
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup of corn
- 1 can of black beans, drained and rinsed
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1 cup of vegetable broth
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, sauté onion and garlic until translucent.
- Add bell pepper and zucchini; cook for 5 minutes.
- Stir in corn, black beans, cumin, chili powder, salt, and pepper.
- Add quinoa and vegetable broth; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Fluff quinoa with a fork and garnish with cilantro.
Notes
- Adjust spices according to your taste.
- This dish can be made ahead and reheated.
- Serve warm as a main dish.
