Description

Ingredients

  • 2 cups of quinoa
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup of corn
  • 1 can of black beans, drained and rinsed
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 cup of vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, sauté onion and garlic until translucent.
  3. Add bell pepper and zucchini; cook for 5 minutes.
  4. Stir in corn, black beans, cumin, chili powder, salt, and pepper.
  5. Add quinoa and vegetable broth; bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Fluff quinoa with a fork and garnish with cilantro.
