A delicious vegan recipe perfect for Thanksgiving.
Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, sauté onions and garlic until translucent.
- Add carrots and celery to the skillet. Cook until soft.
- Add thyme, rosemary, salt, and pepper to the mixture.
- Combine the vegetable mixture with quinoa. Stir well.
- Serve warm.
Notes
- This dish can be prepared a day in advance.
- Store leftovers in an airtight container.
