Ingredients

  • 4 cups of vegetable broth
  • 1 cup of chopped carrots
  • 1 cup of chopped celery
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, sauté onions and garlic until translucent.
  5. Add carrots and celery to the skillet. Cook until soft.
  6. Add thyme, rosemary, salt, and pepper to the mixture.
  7. Combine the vegetable mixture with quinoa. Stir well.
  8. Serve warm.
