Ingredients

  • 1 cup brown sugar
  • 1 gallon water
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 1 tablespoon rosemary

  • 4 cloves garlic, crushed
  • 1 orange, sliced
  • 1 lemon, sliced

Instructions

  1. In a large pot, combine water, salt, and sugar. Heat until dissolved.
  2. Add black peppercorns, allspice berries, rosemary, thyme, garlic, orange, and lemon.
  3. Remove from heat and let cool to room temperature.
  4. Place the turkey in a large container and pour the brine over it.
  5. Refrigerate for 12 to 24 hours.
  6. Remove turkey from brine, rinse, and pat dry before cooking.
