Ingredients

  • 1 cup brewed coffee
  • 1/2 cup pumpkin puree
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. Brew coffee and let it cool.
  2. In a bowl, mix pumpkin puree, mascarpone cheese, sugar, vanilla extract, and pumpkin pie spice.
  3. In another bowl, whip heavy cream until stiff peaks form.
  4. Fold whipped cream into the pumpkin mixture.
  5. Dip ladyfingers briefly in coffee and layer them in a dish.
  6. Spread half of the pumpkin mixture over the ladyfingers.
  7. Add another layer of dipped ladyfingers.
  8. Top with the remaining pumpkin mixture.
  9. Cover and refrigerate for at least 4 hours or overnight.
  10. Before serving, dust with cocoa powder.

Notes

  • Use strong coffee for best flavor.
  • Adjust sugar to taste.
