Ingredients

- 2 cups of butternut squash, diced
- 1 cup of quinoa
- 1 can of black beans, rinsed
- 1 red bell pepper, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1 tablespoon of olive oil
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, toss the butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
- In a pot, cook quinoa according to package instructions.
- In a skillet, sauté onion and garlic until translucent.
- Add red bell pepper, cumin, and chili powder to the skillet. Cook for 5 minutes.
- Mix in black beans and cooked quinoa.
- Combine roasted squash with the quinoa mixture.
- Garnish with fresh cilantro before serving.
Notes
- Feel free to adjust spices to your taste.
- You can add other vegetables like zucchini or mushrooms.
- This dish can be made ahead of time and reheated.
