  • 1 can of black beans, rinsed
  • 1 red bell pepper, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss the butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
  3. In a pot, cook quinoa according to package instructions.
  4. In a skillet, sauté onion and garlic until translucent.
  5. Add red bell pepper, cumin, and chili powder to the skillet. Cook for 5 minutes.
  6. Mix in black beans and cooked quinoa.
  7. Combine roasted squash with the quinoa mixture.
  8. Garnish with fresh cilantro before serving.
