- 1 pie crust, store-bought or homemade
- 2 cups pumpkin puree
- 1 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 4 eggs
- 1 cup heavy cream
- 1 cup pecans, chopped
- 1 cup blueberries
- 1/2 cup sugar for blueberry filling
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the pie crust and press it into a baking dish.
- Mix pumpkin puree, sugar, cinnamon, nutmeg, ginger, eggs, and heavy cream in a bowl.
- Pour the pumpkin mixture into the crust.
- In another bowl, combine blueberries, sugar, cornstarch, and lemon juice.
- Spread the blueberry mixture over the pumpkin layer.
- Top with chopped pecans.
- Bake for 50-60 minutes until set.
- Let it cool before serving.
Notes
- Serve with whipped cream for extra flavor.
- Store leftovers in the refrigerator.
- Can be made a day ahead.
