  • 1 cup pecans, chopped
  • 1 cup blueberries
  • 1/2 cup sugar for blueberry filling
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust and press it into a baking dish.
  3. Mix pumpkin puree, sugar, cinnamon, nutmeg, ginger, eggs, and heavy cream in a bowl.
  4. Pour the pumpkin mixture into the crust.
  5. In another bowl, combine blueberries, sugar, cornstarch, and lemon juice.
  6. Spread the blueberry mixture over the pumpkin layer.
  7. Top with chopped pecans.
  8. Bake for 50-60 minutes until set.
  9. Let it cool before serving.
