Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced vegetables and sauté until soft.
  3. Stir in shredded turkey and cranberry sauce.
  4. Add chicken broth and bring to a boil.
  5. Mix in stuffing and stir well.
  6. Reduce heat and let simmer for 10 minutes.
  7. Season with salt and pepper to taste.
  8. Let cool and store in the fridge for up to three days.
