Ingredients

- 2 lbs beef roast
- 4 cups vegetable broth
- 1 cup red wine
- 3 carrots, chopped
- 2 onions, quartered
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (163°C).
- Season roast with salt and pepper.
- In a large pot, heat oil and brown the roast on all sides.
- Add onions, carrots, and garlic to the pot.
- Pour in red wine and vegetable broth.
- Add rosemary and thyme.
- Cover and roast in the oven for 2-3 hours.
- Check for doneness and adjust cooking time as needed.
- Let rest before slicing and serving.
