Ingredients
Scale
- 4 cups kale, chopped
- 1 cup quinoa, cooked
- 1 apple, diced
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine chopped kale and a pinch of salt.
- Massage the kale for 2-3 minutes until it softens.
- Add cooked quinoa, diced apple, walnuts, dried cranberries, and feta cheese.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or let it sit for 15 minutes for flavors to meld.
