  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add collard greens, salt, and pepper; cook until wilted.
  4. In a separate bowl, mix cornmeal and buttermilk.
  5. Stir in cheddar cheese until well combined.
  6. Pour mixture into a greased baking dish and bake at 350°F for 25 minutes.
  7. Boil sweet potatoes until tender, then mash with brown sugar and cinnamon.
  8. Serve collard greens and sweet potatoes warm.
