Ingredients

- 4 cups collard greens, chopped
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cornmeal
- 2 cups buttermilk
- 1 cup shredded cheddar cheese
- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until soft.
- Add collard greens, salt, and pepper; cook until wilted.
- In a separate bowl, mix cornmeal and buttermilk.
- Stir in cheddar cheese until well combined.
- Pour mixture into a greased baking dish and bake at 350°F for 25 minutes.
- Boil sweet potatoes until tender, then mash with brown sugar and cinnamon.
- Serve collard greens and sweet potatoes warm.
Notes
- Adjust seasoning to taste.
- You can add bacon for extra flavor in collard greens.
- Use fresh sweet potatoes for best taste.
