- 1 whole duck (5–6 lbs)
- 2 oranges, quartered
- 1 onion, quartered
- 4 cloves garlic, crushed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon fresh thyme
- 1 cup chicken broth
- 1/2 cup red wine
Instructions
- Preheat your oven to 350°F (175°C).
- Remove the giblets from the duck and pat it dry.
- Season the duck inside and out with salt and pepper.
- Stuff the cavity with oranges, onion, garlic, and thyme.
- Rub the outside with olive oil.
- Place the duck on a roasting rack in a roasting pan.
- Pour chicken broth and red wine into the pan.
- Roast for 2 hours, basting every 30 minutes.
- Increase the temperature to 400°F (200°C) for the last 30 minutes to crisp the skin.
- Let it rest for 15 minutes before carving.
Notes
- You can substitute the oranges with apples for a different flavor.
- Ensure the duck is fully thawed if frozen.
- Save the drippings for a delicious gravy.
