Ingredients

  • 2 oranges, quartered
  • 1 onion, quartered
  • 4 cloves garlic, crushed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme
  • 1 cup chicken broth
  • 1/2 cup red wine

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Remove the giblets from the duck and pat it dry.
  3. Season the duck inside and out with salt and pepper.
  4. Stuff the cavity with oranges, onion, garlic, and thyme.
  5. Rub the outside with olive oil.
  6. Place the duck on a roasting rack in a roasting pan.
  7. Pour chicken broth and red wine into the pan.
  8. Roast for 2 hours, basting every 30 minutes.
  9. Increase the temperature to 400°F (200°C) for the last 30 minutes to crisp the skin.
  10. Let it rest for 15 minutes before carving.
