Delicious and festive cupcakes for Thanksgiving.
Ingredients

- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup pumpkin puree
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup cream cheese, softened
- 1 cup powdered sugar
- 1 tbsp milk (for frosting)
- Sprinkles for decoration
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, cream butter and sugar.
- Add eggs, milk, and vanilla to the butter mixture.
- Mix in the pumpkin puree.
- Combine dry ingredients with the wet mixture.
- Fill cupcake liners with batter.
- Bake for 20-25 minutes.
- Let cool completely.
- Mix cream cheese with powdered sugar and milk for frosting.
- Frost cupcakes and add sprinkles.
Notes
- Store cupcakes in an airtight container.
- Can substitute pumpkin with applesauce.
- Adjust spices to taste.
