Ingredients

- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons dried thyme
- 1 lemon, quartered
- 1 onion, quartered
- 4 sprigs fresh rosemary
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub olive oil over the chicken.
- Season the chicken with salt, pepper, garlic powder, onion powder, and thyme.
- Stuff the cavity with lemon, onion, and rosemary.
- Place the chicken in a roasting pan.
- Roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 15 minutes before carving.
