Description

A delicious cheesecake perfect for Thanksgiving celebrations.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 1/2 cup sugar, and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In another bowl, beat cream cheese until smooth.
  5. Add 1 cup sugar and vanilla extract, mixing well.
  6. Add eggs one at a time, mixing after each addition.
  7. Stir in pumpkin puree, cinnamon, nutmeg, ginger, and salt.
  8. Pour the filling over the crust in the pan.
  9. Bake for 60 minutes or until set.
  10. Cool and refrigerate for at least 4 hours before serving.

Notes

  • Serve with whipped cream.
  • Can be made a day in advance.
  • Store leftovers in the refrigerator.
