- 2 pounds carrots, peeled and sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons honey
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced carrots, olive oil, salt, and black pepper.
- Toss until the carrots are well coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast for 25-30 minutes, or until tender and golden.
- Drizzle honey over the carrots and toss to coat.
- Garnish with fresh parsley before serving.
Notes
- Adjust the sweetness by adding more or less honey.
- Try adding a sprinkle of cinnamon for extra flavor.
- These can be made ahead and reheated.
