- 1/4 cup dried cranberries
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the butternut squash with olive oil, salt, pepper, thyme, and rosemary.
- Spread the squash on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Once tender, remove from the oven and mix in pecans and cranberries.
- Serve warm as a side dish.
