- 200g rice noodles
- 200g chicken breast, sliced
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1/4 cup chopped peanuts
- Fresh cilantro for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a pan, heat sesame oil over medium heat. Add sliced chicken and cook until browned.
- Add broccoli and red bell pepper to the pan. Sauté for 5 minutes.
- In a bowl, mix peanut butter, soy sauce, honey, and garlic. Stir until smooth.
- Add cooked noodles and peanut sauce to the pan. Toss everything to combine.
- Serve topped with chopped peanuts and fresh cilantro.
Notes
- Adjust the spice level by adding chili flakes if desired.
- You can substitute chicken with tofu for a vegetarian option.
