Ingredients

- 8 oz rice noodles
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp lime juice
- 1 tbsp sesame oil
- 1/4 cup water
- 1 cup shredded carrots
- 1 red bell pepper, sliced
- 1/4 cup chopped green onions
- Cilantro for garnish
Instructions
- Cook rice noodles according to package instructions.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, sesame oil, and water until smooth.
- In a pan, sauté carrots and bell pepper until tender.
- Add cooked noodles to the pan with vegetables.
- Pour peanut sauce over the noodles and mix well.
- Garnish with green onions and cilantro before serving.
Notes
- Adjust the sauce thickness by adding more water if needed.
- For extra heat, add chili flakes or Sriracha.
- Store leftovers in the fridge for up to 3 days.
