Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp sesame oil
  • 1/4 cup water
  • 1 cup shredded carrots
  • 1 red bell pepper, sliced
  • 1/4 cup chopped green onions
  • Cilantro for garnish

Instructions

  1. Cook rice noodles according to package instructions.
  2. In a bowl, mix peanut butter, soy sauce, honey, lime juice, sesame oil, and water until smooth.
  3. In a pan, sauté carrots and bell pepper until tender.
  4. Add cooked noodles to the pan with vegetables.
  5. Pour peanut sauce over the noodles and mix well.
  6. Garnish with green onions and cilantro before serving.

Notes

  • Adjust the sauce thickness by adding more water if needed.
  • For extra heat, add chili flakes or Sriracha.
