A fresh and spicy Thai chili pasta salad that is easy to make and packed with flavor.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup peanuts, chopped
- 1/4 cup lime juice
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon Thai chili paste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red bell pepper, green onions, and cilantro.
- In a small bowl, whisk together lime juice, soy sauce, sesame oil, and Thai chili paste.
- Pour the dressing over the salad and toss to combine.
- Top with chopped peanuts before serving.
Notes
- Adjust the chili paste to taste for desired spice level.
- Serve chilled or at room temperature.
- This salad can be made ahead of time and stored in the fridge.
