Ingredients

  • 8 ounces pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed
  • 1 cup corn, canned or frozen
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cherry tomatoes, black beans, corn, red onion, bell pepper, avocado, and cilantro.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill for at least 30 minutes before serving.
