Description

A delicious Tex-Mex dish featuring rolled tortillas filled with seasoned beef and topped with enchilada sauce and cheese.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook ground beef with onion and garlic until beef is browned.
  3. Add cumin, chili powder, salt, and pepper. Stir to combine.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with beef mixture, roll up, and place seam side down in the dish.
  6. Pour remaining enchilada sauce over the rolled tortillas.
  7. Sprinkle cheese on top.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.

Notes

  • Serve with sour cream and guacamole.
  • For a vegetarian option, replace beef with black beans.
