Description
A delicious Tex-Mex dish featuring rolled tortillas filled with seasoned beef and topped with enchilada sauce and cheese.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook ground beef with onion and garlic until beef is browned.
- Add cumin, chili powder, salt, and pepper. Stir to combine.
- Spread a small amount of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with beef mixture, roll up, and place seam side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas.
- Sprinkle cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- Serve with sour cream and guacamole.
- For a vegetarian option, replace beef with black beans.
- Can be made ahead and refrigerated before baking.
