- 4 large bell peppers
- 1 pound ground beef or turkey
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup salsa
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat.
- Add ground meat and cook until browned.
- Stir in black beans, corn, taco seasoning, and salsa. Cook for 5 minutes.
- Stuff the mixture into the bell peppers.
- Top with shredded cheese.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
- Serve hot.
Notes
- You can use any color bell peppers.
- Feel free to add other toppings like avocado or sour cream.
- These can be made ahead of time and reheated.
