Ingredients

  • 4 large bell peppers
  • 1 pound ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat.
  4. Add ground meat and cook until browned.
  5. Stir in black beans, corn, taco seasoning, and salsa. Cook for 5 minutes.
  6. Stuff the mixture into the bell peppers.
  7. Top with shredded cheese.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
  10. Serve hot.
