- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheese
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Cook the rice according to package instructions.
- In a skillet, brown the ground beef over medium heat.
- Add taco seasoning and water; stir and simmer for 5 minutes.
- In a bowl, layer cooked rice, seasoned beef, black beans, corn, and diced tomatoes.
- Top with shredded lettuce, cheese, avocado, and cilantro.
- Serve with lime wedges on the side.
