- 4 medium potatoes, diced
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup sour cream
- 1/2 cup chopped green onions
- 1 can black beans, drained and rinsed
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat.
- Add diced potatoes and cook until tender, about 15 minutes.
- Add ground beef or turkey to the skillet and cook until browned.
- Stir in taco seasoning and black beans, cooking for another 5 minutes.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 10-15 minutes until cheese is melted.
- Garnish with sour cream and green onions before serving.
Notes
- For a vegetarian option, use plant-based meat or omit the meat.
