Description

A hearty and flavorful taco casserole loaded with layers of meat, cheese, and tortillas.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 2 cups salsa
  • 4 tortillas, cut into strips
  • 2 cups shredded cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and onion.
  3. Drain excess fat and add black beans, corn, taco seasoning, and salsa.
  4. In a baking dish, layer half of the tortilla strips.
  5. Add half of the meat mixture on top of the tortillas.
  6. Sprinkle with half of the cheese.
  7. Repeat layers with remaining ingredients.
  8. Bake for 25-30 minutes until cheese is melted.
  9. Let cool for a few minutes before serving.
