A hearty and flavorful taco casserole loaded with layers of meat, cheese, and tortillas.
Ingredients

- 1 pound ground beef
- 1 onion, diced
- 1 can black beans, drained
- 1 can corn, drained
- 1 packet taco seasoning
- 2 cups salsa
- 4 tortillas, cut into strips
- 2 cups shredded cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef and onion.
- Drain excess fat and add black beans, corn, taco seasoning, and salsa.
- In a baking dish, layer half of the tortilla strips.
- Add half of the meat mixture on top of the tortillas.
- Sprinkle with half of the cheese.
- Repeat layers with remaining ingredients.
- Bake for 25-30 minutes until cheese is melted.
- Let cool for a few minutes before serving.

- Customize by adding your favorite toppings.
- Can be made ahead and stored in the refrigerator.
- Freezes well for future meals.
