A hearty and flavorful taco bake casserole that combines layers of seasoned beef, tortillas, cheese, and toppings.

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained
- 1 can corn, drained
- 1 cup salsa
- 6 corn tortillas
- 2 cups shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef until browned.
- Add taco seasoning, black beans, corn, and salsa to the skillet.
- Stir well and let simmer for 5 minutes.
- In a baking dish, layer three tortillas on the bottom.
- Spread half of the beef mixture over the tortillas.
- Sprinkle with one cup of cheese.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
- Bake for 25 minutes or until the cheese is melted and bubbly.
- Let it cool for 5 minutes before serving. Top with sour cream and green onions.
Notes
- Feel free to add your favorite toppings.
- Can substitute ground turkey for a leaner option.
