A delicious sweet potato casserole perfect for Thanksgiving.
Ingredients

- 4 large sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup mini marshmallows
Instructions
- Preheat oven to 350°F (175°C).
- Peel and cube the sweet potatoes.
- Boil sweet potatoes in water until tender, about 15 minutes.
- Drain and mash sweet potatoes in a bowl.
- Add brown sugar, butter, milk, vanilla, and cinnamon to the mashed sweet potatoes.
- Mix until smooth.
- Spread mixture in a baking dish.
- Top with mini marshmallows.
- Bake for 25 minutes or until marshmallows are golden brown.
Notes
- Can be made ahead and stored in the refrigerator.
- Adjust sugar according to taste.
- For a crunchy topping, add chopped pecans.
