- 2 bell peppers, chopped

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook until they begin to soften, about 10 minutes.
- Add onions and bell peppers. Cook until vegetables are tender, about 5-7 minutes.
- Season with salt and pepper.
- Make four wells in the mixture and crack an egg into each well.
- Cover and cook until eggs are set, about 5 minutes.
