Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix mashed sweet potatoes, sugar, and butter.
  3. Add eggs and vanilla extract; mix well.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the sweet potato mixture.
  6. In a small bowl, mix brown sugar and cinnamon for the filling.
  7. Spread half of the batter in a greased pan.
  8. Sprinkle the cinnamon filling over the batter.
  9. Top with the remaining batter.
  10. Bake for 30-35 minutes or until a toothpick comes out clean.
  11. Let cool before serving.
