Description

A delicious and easy-to-make sweet potato casserole, perfect for holiday gatherings and family dinners.

Ingredients

  • Sweet Potatoes: 4 large, peeled and cubed
  • Brown Sugar: 1 cup
  • Butter: 1/2 cup, melted
  • Ground Cinnamon: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Mini Marshmallows: 2 cups
  • Pecans: 1 cup, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil cubed sweet potatoes in a large pot until tender, about 15-20 minutes. Drain and cool.
  3. In a mixing bowl, mash the sweet potatoes until smooth, then mix in melted butter, brown sugar, cinnamon, and salt.
  4. Chop pecans and set aside. Spread the sweet potato mixture in a greased 9×13-inch baking dish.
  5. Sprinkle chopped pecans and mini marshmallows on top.
  6. Bake for 25-30 minutes until marshmallows are golden brown.
  7. Let cool for a few minutes before serving.

Notes

  • Overcooking sweet potatoes can make them watery.
  • Ensure sweet potatoes are mashed well for a smooth texture.
  • Do not skip the salt as it balances the sweetness.
  • Use fresh mini marshmallows for the best melting results.
  • Always grease the baking dish to prevent sticking.
