Ingredients
- Sweet Potatoes: 4 large, peeled and cubed
- Brown Sugar: 1 cup
- Butter: 1/2 cup, melted
- Ground Cinnamon: 1 teaspoon
- Salt: 1/2 teaspoon
- Mini Marshmallows: 2 cups
- Pecans: 1 cup, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Boil cubed sweet potatoes in a large pot until tender, about 15-20 minutes. Drain and cool.
- In a mixing bowl, mash the sweet potatoes until smooth, then mix in melted butter, brown sugar, cinnamon, and salt.
- Chop pecans and set aside. Spread the sweet potato mixture in a greased 9×13-inch baking dish.
- Sprinkle chopped pecans and mini marshmallows on top.
- Bake for 25-30 minutes until marshmallows are golden brown.
- Let cool for a few minutes before serving.
