- 1 large sweet potato, cubed
- 1 cup cooked brown rice
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 avocado, diced
- 1/2 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, cumin, chili powder, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes or until tender.
- In a bowl, combine cooked brown rice, black beans, corn, and salsa.
- Add roasted sweet potatoes and mix well.
- Top with diced avocado.
- Serve and enjoy.
