Ingredients

  • 1 cup cooked brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 avocado, diced
  • 1/2 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes or until tender.
  4. In a bowl, combine cooked brown rice, black beans, corn, and salsa.
  5. Add roasted sweet potatoes and mix well.
  6. Top with diced avocado.
