Ingredients
- Chicken breasts: 4 pieces, about 1.5 lbs (680 g)
- Sweet potatoes: 2 medium, about 1 lb (450 g)
- Bell peppers: 1 red and 1 yellow, sliced
- Onion: 1 medium, chopped
- Garlic: 3 cloves, minced
- Olive oil: 2 tablespoons
- Paprika: 1 teaspoon
- Salt and pepper: to taste
Instructions
- Prepare all ingredients: peel and dice sweet potatoes, slice bell peppers, chop onion, and mince garlic.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and paprika, then cook for 6-7 minutes on each side until golden brown. Remove chicken and set aside.
- Add remaining tablespoon of olive oil to the skillet, then sauté onion and garlic for 2-3 minutes until translucent. Add diced sweet potatoes, cover, and cook for 10-12 minutes, stirring occasionally.
- Add bell peppers to the skillet and cook for an additional 5 minutes.
- Return the cooked chicken to the skillet, nestling it among the vegetables, and cook for another 2-3 minutes to heat through. Serve and enjoy!
Notes
- Customize with optional ingredients like spinach, chili flakes, fresh herbs, lemon juice, or cheese.
- Let chicken rest after cooking to retain juices.
- Pair with a side salad or crusty bread for a complete meal.
