Description
A creamy and sweet macaroni salad inspired by Amish recipes.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1/2 cup sugar
- 1/4 cup vinegar
- 1 cup diced celery
- 1/2 cup diced onion
- 1 cup diced bell pepper
- 1/2 cup sweet pickle relish
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and cool.
- In a large bowl, mix the mayonnaise, sugar, and vinegar until smooth.
- Add the cooled macaroni, celery, onion, bell pepper, and sweet pickle relish to the bowl.
- Stir until all ingredients are well combined.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 2 hours before serving.
Notes
- For a healthier option, use Greek yogurt instead of mayonnaise.
- Adjust the sweetness by adding more or less sugar.
- Try adding diced hard-boiled eggs for extra protein.
