- 1 tablespoon olive oil
Instructions
- Prepare the swamp potatoes by peeling and dicing them.
- Chop the onion and mince the garlic.
- Add the swamp potatoes, onion, garlic, and vegetable broth to the crockpot.
- Season with salt, pepper, and thyme.
- Drizzle olive oil on top.
- Cover and cook on low for 6-8 hours or until potatoes are tender.
