Ingredients

- 2 cups romaine lettuce, chopped
- 1 cup red cabbage, shredded
- 1 cup carrots, grated
- 1/2 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sunflower seeds
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables.
- In a large bowl, combine romaine lettuce, red cabbage, carrots, cucumber, bell pepper, red onion, and cherry tomatoes.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss well.
- Add sunflower seeds and feta cheese on top.
- Serve immediately or refrigerate for up to an hour before serving.
Notes
- Feel free to add other vegetables or proteins.
- Best served fresh for maximum crunch.
- Can be made ahead of time, just keep dressing separate.
