Ingredients

  • 2 cups romaine lettuce, chopped
  • 1 cup red cabbage, shredded
  • 1 cup carrots, grated
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sunflower seeds
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables.
  2. In a large bowl, combine romaine lettuce, red cabbage, carrots, cucumber, bell pepper, red onion, and cherry tomatoes.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  4. Pour the dressing over the salad and toss well.
  5. Add sunflower seeds and feta cheese on top.
  6. Serve immediately or refrigerate for up to an hour before serving.

Notes

  • Feel free to add other vegetables or proteins.
