Sunshine Dandelion Jelly is a sweet and floral spread made from dandelion flowers, perfect for toast or pastries.

- 1 cup dandelion flowers
- 4 cups water
- 1/4 cup lemon juice
- 1 package (1.75 oz) fruit pectin
- 5 cups sugar
Instructions
- Gather dandelion flowers and rinse them thoroughly.
- In a pot, boil the flowers in water for 10 minutes.
- Strain the liquid into a clean bowl, discarding the flowers.
- Add lemon juice and pectin to the liquid, stirring well.
- Bring the mixture to a boil, then add sugar gradually, stirring constantly.
- Boil for 1-2 minutes until the mixture thickens.
- Pour the jelly into sterilized jars and seal them.
- Let cool completely before storing in the refrigerator.
Notes
- Use only fresh dandelion flowers, free from pesticides.
- Store the jelly in the refrigerator for up to a month.
- Can be canned for longer storage if processed correctly.
