  • Sundried tomatoes: 150 grams, chopped (preferably in oil for added flavor)
  • Mascarpone cheese: 200 grams
  • Garlic: 3 cloves, minced
  • Olive oil: 2 tablespoons
  • Fresh basil: a handful, torn or chopped
  • Salt: to taste
  • Pepper: to taste
  • Grated Parmesan cheese: for serving (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add chopped sundried tomatoes to the skillet and cook for another 2-3 minutes.
  4. Lower the heat and stir in mascarpone cheese until melted and combined. Adjust the consistency with reserved pasta water if needed.
  5. Add the drained pasta to the skillet and toss to coat with the sauce. Season with salt and pepper to taste.
  6. Fold in fresh basil and serve with grated Parmesan cheese if desired.
