Ingredients
- Pasta of choice: 300 grams (fettuccine, penne, or spaghetti work well)
- Sundried tomatoes: 150 grams, chopped (preferably in oil for added flavor)
- Mascarpone cheese: 200 grams
- Garlic: 3 cloves, minced
- Olive oil: 2 tablespoons
- Fresh basil: a handful, torn or chopped
- Salt: to taste
- Pepper: to taste
- Grated Parmesan cheese: for serving (optional)
Instructions
- Bring a large pot of salted water to a rolling boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add chopped sundried tomatoes to the skillet and cook for another 2-3 minutes.
- Lower the heat and stir in mascarpone cheese until melted and combined. Adjust the consistency with reserved pasta water if needed.
- Add the drained pasta to the skillet and toss to coat with the sauce. Season with salt and pepper to taste.
- Fold in fresh basil and serve with grated Parmesan cheese if desired.
