- 1 whole chicken
- 4 carrots, chopped

Instructions
- Preheat your oven to 375°F (190°C).
- In a large roasting pan, place the whole chicken.
- Surround the chicken with carrots, potatoes, onions, and garlic.
- Drizzle olive oil over the chicken and vegetables.
- Sprinkle rosemary, thyme, salt, and pepper on top.
- Roast in the oven for 1.5 hours or until the chicken is cooked through.
- Let it rest for 10 minutes before carving.

- Leftovers can be stored in the fridge for up to 3 days.
