A refreshing summer vegetable pasta salad filled with colorful veggies.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook pasta according to package instructions. Drain and cool.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour dressing over the pasta salad and toss to combine.
- Garnish with fresh basil leaves.
- Refrigerate for at least 30 minutes before serving.

- Use any seasonal vegetables you like.
- This salad can be made a day ahead.
