Ingredients

  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large pan, sauté the summer squash and onion until tender.
  3. In a bowl, mix the cheese, sour cream, and cream of chicken soup.
  4. Add the sautéed vegetables to the cheese mixture and stir well.
  5. Pour the mixture into a greased casserole dish.
  6. Combine crushed Ritz crackers with melted butter and sprinkle over the top.
  7. Bake for 30 minutes or until bubbly and golden brown.
