A delicious summer squash casserole topped with crunchy Ritz crackers.

- 4 cups summer squash, sliced
- 1 cup onion, chopped
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can cream of chicken soup
- 1 cup Ritz crackers, crushed
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- In a large pan, sauté the summer squash and onion until tender.
- In a bowl, mix the cheese, sour cream, and cream of chicken soup.
- Add the sautéed vegetables to the cheese mixture and stir well.
- Pour the mixture into a greased casserole dish.
- Combine crushed Ritz crackers with melted butter and sprinkle over the top.
- Bake for 30 minutes or until bubbly and golden brown.
Notes
- Fresh summer squash works best.
- You can add more cheese for extra flavor.
- Substitute cream of mushroom soup for a vegetarian option.
