- 1 lb ground beef
- 2 cups diced tomatoes
- 1 cup corn
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef with onion and garlic.
- Add diced tomatoes, corn, cooked rice, chili powder, cumin, salt, and pepper.
- Mix well and cook for 5 minutes.
- Transfer the mixture to a casserole dish.
- Top with shredded cheese.
- Bake for 25 minutes or until cheese is melted.
- Let it cool for a few minutes before serving.
Notes
- This casserole can be made ahead of time and stored in the fridge.
- Feel free to add your favorite vegetables.
