Description
A warm and hearty stuffed pepper soup loaded with vegetables and ground meat.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 cup rice, uncooked
- 2 tsp Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add chopped onion and minced garlic, cooking until soft.
- Stir in the diced bell peppers and cook for 5 minutes.
- Add diced tomatoes, beef broth, rice, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30 minutes.
- Serve hot, garnished with parsley if desired.
Notes
- Use any color of bell pepper for a vibrant soup.
- Ground turkey can be substituted for a lighter version.
- Leftovers can be stored in the fridge for up to 3 days.
