Ingredients

  • 4 bell peppers (any color)
  • 1 cup cooked rice
  • 1 cup cooked ground meat (beef or turkey)
  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, combine rice, ground meat, cheese, diced tomatoes, garlic powder, onion powder, salt, and pepper.
  4. Stuff each pepper with the mixture.
  5. Place the stuffed peppers in a baking dish and drizzle with olive oil.
  6. Bake for 25-30 minutes until the peppers are tender.
  7. Use strips of cheese to create ‘bandages’ on the peppers.
  8. Return to the oven for an additional 5 minutes until the cheese is melted.
