Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together butter and sugar.
  3. Add egg, lemon juice, and lemon zest.
  4. In another bowl, mix flour, baking powder, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Scoop dough onto a baking sheet.
  7. Make a small indentation in the center of each scoop.
  8. Fill each indentation with lemon curd.
  9. Bake for 10-12 minutes until edges are golden.
  10. Cool on a wire rack before serving.
