Instructions
- Preheat your oven to 400°F (200°C).
- Slice the delicata squashes in half lengthwise and scoop out the seeds.
- Place the squashes cut side up on a baking sheet.
- In a bowl, mix cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
- Spoon the filling into each squash half.
- If using, sprinkle cheese on top of the filling.
- Bake for 25-30 minutes until the squash is tender.
